10+ EPIC Stuffed Oatmeal Cookies


When a flat cookie just isn’t enough. This recipe stuffs a soft oatmeal cookie with an endless variety of fillings that will satisfy anyone. Fruit, sauce, whipping, frosting, ice cream- the sky’s the limit. Part cookie, part tart, part fruit cup- all totally yummy.

To make All-American Apple Crisp Stuffed Cookies:

Ingredients for Cookies:

  • 1 cup brown sugar

  • 1/2 cup granulated sugar

  • 2 sticks unsalted butter, softened

  • 2 eggs

  • 1 tsp. vanilla

  • 1 1/4 cup all-purpose flour

  • 1 3/4 cup rolled oats

  • 1 tsp. baking powder

  • 1 tsp. cinnamon

  • 1/2 tsp. salt

Ingredients for All-American Apple Crisp filling:

  • 1/4 cup brown sugar

  • 8 oz jar of apple sauce

  • 1/2 tsp. ground nutmeg

  • 1/2 tsp. ground cinnamon

  • One 21 oz can of Apple Pie filling

  • Caramel sundae sauce

Before you begin, prepare your work area: Large mixing bowl, two 8 cup muffin pans, cooking spoon, butter knife, small mixing bowl, tablespoon, measuring cup, measuring spoons, cooking spray, shot glass. Prep: 10 min, 20 min to cool and fill Cook: 18-20 min Ready: 28-30 min Serves: 24 cookies

Before you handle any food, wash your hands thoroughly with soap and water. Clean your kitchen work area and pull back your hair or wear a cap. You want to avoid contaminating your meal with harmful bacteria that could cause food illness.


To make Stuffed Cookies:

1. Preheat oven to 350 degrees F.

2. In a large mixing bowl, mix the butter, 1/2 cup granulated sugar and 1 cup brown sugar with spoon.

3. Add eggs and vanilla. Stir until evenly combined.

4. Add flour, oats, baking powder, cinnamon and salt. Stir until evenly combined.


5. Spray muffin pan and spoon dough into muffin pan cups. Press dough down and flatten within each cup with a tablespoon.

6. Bake for 20 minutes until the cookies rise slightly and turn golden brown.


7. While the cookies are still soft and warm, spray the bottom of a shot glass with cooking spray and press the shot glass down into the center of each cookie to create a filling hole.

8. Let cool in pans for 15 minutes. Remove from pans and allow to cool.

To make the cookie filling:

9. Mix sugars, apple sauce, nutmeg, cinnamon in mixing bowl. Add apple pie filling and chop into smaller chunks. Stir to mix.

10. Spoon a heaping TBSN of apple mixture into the cookie cups.

11. Drizzle with caramel sundae sauce and serve.

12. Refrigerate for 30 min before serving.

1 serving: 150 calories, 8g fat (4g saturated fat), 20mg cholesterol, 90mg sodium, 20g carbohydrate (4g sugars, 1g fiber), 2g protein.

Rolled oats are high in fiber and protein compared to other grains. Oats contain some unique components — in particular, the soluble fiber beta-glucan and antioxidants called avenanthramides. Benefits include lower blood sugar and cholesterol levels, protection against skin irritation and reduced constipation. Apples are extremely rich in important antioxidants, flavanoids, and dietary fiber. The phytonutrients andantioxidants in apples may help reduce the risk of developing cancer, hypertension, diabetes, and heart disease.

Vegan and vegetarian. Replace eggs with Vegan egg substitute for cooking. Use Vegan butter. Kick the GLUTS and ensure the oats that you use are non-contaminated, pure oats. They are safe for most people with gluten-intolerance. The main problem with oats in gluten-free eating is contamination. Most commercial oats are processed in facilities that also process wheat, barley, and rye. Use Gluten-Free All Purpose flour and Baking Powder. Reduce the carbs, sugar, and calories by using sugar substitutes for the granulated and brown sugar. Use sugar free apple pie filling and caramel sauce.

Cheesecake Stuffed Cookies

Prepare Mini Cheesecake filling recipe and stuff cookies with cheesecake mixture cookies instead of apple mixture. Refrigerate remaining cookies after serving. Add fruit on top if desired.

Reeses' Stuffed Cookies

Replace apple mixture with Reeses' Peanut Butter cups with liner paper removed. Refrigerate remaining cookies after serving.


Peach Cobbler Stuffed Cookies

Stuff cookies with pureed peaches and brown sugar instead of apple mixture. Refrigerate remaining cookies after serving.

Key Lime Pie Stuffed Cookies

Follow basic recipe for baking and pressing center for filling. Prepare Key lime Parfait filling recipe and fill each cookie once cooled with a heaping TBSN of Key Lime filling. Refrigerate remaining cookies after serving.


Blueberry Pie Stuffed Cookies

Stuff cookies with canned Blueberry Pie filling instead of apple mixture. Refrigerate remaining cookies after serving.


Pumpkin Cheesecake Stuffed Cookies

Stuff cookies with Pumpkin Cheesecake recipe instead of apple mixture. Refrigerate remaining cookies after serving.


Cherry Pie Stuffed Cookies

Stuff cookies with canned Cherry Pie filling instead of apple mixture. Refrigerate remaining cookies after serving.


Carrot Cake Stuffed Cookies

Trail Mix Stuffed Cookies

Stuff cookies with a TBSN of your favorite Trail Mix instead of apple mixture. Refrigerate remaining cookies after serving.

Chocolate Bar Stuffed Cookies

Stuff cookies with 2-3 miniature chocolate bars such as Hersey's, Almond Joy's, and Dove-- instead of apple mixture. Refrigerate remaining cookies after serving.


Chocolate Mint Stuffed Cookies

Stuff cookies with 3-4 Junior Mint chocolate mint candies instead of apple mixture. Refrigerate remaining cookies after serving.
