This is an amazing sauce that blends lime, cilantro, avocado, and cream cheese, which makes a great dip for nachos, a dressing for salads, drizzled over tacos, or dolloped on top of any of your favorite Mexican or seafood dishes.
2 ripe avocados, removed from skins
1/2 cup fresh cilantro, chopped
1/2 cup (8 oz) whipped cream cheese (Vegan diets use Vegan-friendly cream cheese or Greek yogurt)
1/2 cup preferred heavy cream (Vegan diets use Vegan-friendly cream or Almond Mlk)
1 teaspoon salt
1 teaspoon cumin
1 teaspoon garlic, minced
1/4 cup lime juice
2 TBSN lime zest
1 small sprig of Cilantro (garnish)
Blender, mixing spoon, measuring spoons, measuring cups, sharp carving knife Prep: 5 minutes prep Ready: 5 minutes Serves: 6-8
1. Add avocados, cilantro, sour cream, heavy cream, cumin, salt, lime zest and lime juice into a large mixing bowl. Keep a small sprig of cilantro for garnish.
2. Use hand mixer to blend on high until smooth, about 3-5 minutes.
3. Refrigerate before serving. Add sprig of cilantro for garnish.
