10 Epic Chicken Wing Recipes

The secret for making amazing chicken wings is using a flavorful dry rub. I'll show you show to roast them in an oven or grill them with smoke on your BBQ. Oven roasted on high heat makes them moist and delicious. I prefer to smoke my wings while grilling them over high heat, which adds another dimension of flavor to your wings. These recipes can be used for both chicken wings or chicken drummies- whatever your preference.



  • 3 pounds trimmed chicken wings and/or drumettes

  • 1/4 cup Extra Virgin Olive Oil

  • 1 cup of preferred rub mixture (select one of the epic rub mixtures listed below)

Before you handle any food, wash your hands thoroughly with soap and water.

Clean your kitchen work area and pull back your hair or wear a cap.

You want to avoid contaminating your meal with harmful bacteria that could cause food illness.


1. Brine your chicken wing/drummies. Click here for instructions on brining chicken.

2. Some recipes require hours of marinating prior to baking. Follow directions for recipes that require marinading.

3. When ready to apply preferred rub, preheat oven or BBQ grill to 450 degrees F.

4. Line a large rimmed baking sheet with parchment paper, or use a disposable foil baking sheet for the grill.

5. Place the chicken wings/drummies in a large bowl and pour the olive oil all over the chicken.

6. Generously sprinkle the preferred rub mixture on each piece of chicken and massage thoroughly to completely coat each piece. Select one or more of the epic dry rub recipes listed below in our ROCK OUT section.

TIP:Do not dunk your chicken into the mixture as it will create clumpy globs in your bowl of herbs and seasonings, which will prevent the dry seasonings from adhering evenly on your chicken.

7. Lay chicken wings/drummies on the baking sheet in a single layer. Keep each piece separated.

8. Bake the chicken wings for 45 minutes until fully cooked with a crispy herb crust. If smoking on a grill, apply damp wood chips to grill to start the smoking process. Once the chips begin smoking, add the chicken on the top rack of your BBQ and let cook and smoke for 45 minutes.

9. Remove from oven or grill, and let sit for 5-10 minutes before serving with favorite dipping sauces.

Combine all of the listed herb and seasoning ingredients for one cup of dry rub mixture.

Caribbean Jerk Dry Rub


  • 2 TBSN ground coriander

  • 2 TBSN ground ginger

  • 2 TBSN brown sugar

  • 1 TBSN onion powder

  • 1 TBSN garlic powder

  • 1 TBSN salt

  • 1 TBSN cayenne powder

  • 1 TBSN ground black pepper

  • 1 TBSN thyme

  • 1 TBSN ground cinnamon

  • 1 TBSN cloves

  • 1 TBSN ground marjoram

  • 1 TBSN ground nutmeg

 

Spicy Cajun Dry Rub


  • 2 TBSN cayenne pepper

  • 2 TBSN thyme

  • 2 TBSN oregano

  • 2 TBSN smoked paprika

  • 2 TBSN garlic powder

  • 2 TBSN onion powder

  • 1 TBSN chili powder

  • 1 TBSN salt

  • 1 TBSN garlic salt

  • 1 TBSN ground black pepper

 

Italian Garlic & Parmesan Dry Rub


  • 2 TBSN salt

  • 2 TBSN oregano

  • 2 TBSN basil

  • 2 TBSN rosemary

  • 2 TBSN thyme

  • 2 TBSN parsley

  • 2 TBSN garlic powder

  • 2 TBSN grated parmesan cheese

 

Espresso Dark Roast Dry Rub


  • 1/4 cup dark roast coffee grinds

  • 1/4 cup dark brown sugar

  • 2 TBSN paprika

  • 2 TBSN salt

  • 2 TBSN chili powder

  • 1 TBSN onion powder

  • 1 TBSN cinnamon

 

Mojito Lime Dry Rub


  • 1/4 cup grated lime zest

  • 2 TBSN tarragon

  • 2 TBSN onion powder

  • 2 TBSN garlic powder

  • 2 TBSN coriander

  • 1 TBSN dried parsley

  • 1 TBSN salt

  • 1 TBSN black pepper

  • 1 TBSN sweet paprika

 

Memphis BBQ Dry Rub


  • 3 TBSN smoked paprika

  • 4 TBSN brown sugar

  • 2 TBSN salt

  • 2 TBSN cumin

  • 2 TBSN ginger

  • 2 TBSN ground black pepper

  • 1 TBSN onion powder

 

Sweet Heat Dry Rub


  • 1/2 cup dark brown sugar

  • 2 TBSN paprika

  • 2 TBSN cayenne pepper

  • 1 TBSN chili powder

  • 1 TBSN salt

  • 1 TBSN onion powder

  • 1 TBSN garlic powder

 

Brown Sugar BBQ Dry Rub


  • 1/4 cup dark brown sugar

  • 2 TBSN salt

  • 2 TBSN smoked paprika

  • 2 TBSN chili powder

  • 2 TBSN black pepper

  • 2 TBSN ground mustard

  • 1 TBSN thyme

  • 1 TBSN rosemary

 

Mexican Chipotle Dry Rub


  • 2 TBSN salt

  • 3 TBSN oregano

  • 2 TBSN chipotle chili pepper

  • 2 TBSN garlic powder

  • 2 TBSN chili powder

  • 2 TBSN dried cilantro

  • 2 TBSN cumin

  • 1 TBSN onion powder

 

Texas Smoked BBQ Dry Rub


  • 2 TBSN brown sugar

  • 2 TBSN smoked paprika

  • 2 TBSN chili powder

  • 2 TBSN garlic powder

  • 2 TBSN onion powder

  • 1 TBSN tumeric

  • 1 TBSN chipotle powder

  • 1 TBSN cumin

  • 1 TBSN coriander

  • 1 TBSN coarse salt

  • 1 TBSN black pepper


Chicken carries plentiful amounts of protein and a variety of beneficial vitamins and nutrients. They regularly promote the growth of damaged cells and tissues effectively because they have a high content of riboflavin which is essential for normal healing of skin tissue. Your immune system requires adequate levels of protein; iron, magnesium, and potassium to function properly that are abundant in Chicken. These nutrients strengthen cells in your immune system, as well as your teeth and gums due to the high content of phosphorus. When you consume phosphorus regularly, it can alleviate factors that weaken your teeth and prevent gums bleeding as well.
