Breakfast Egg Muffins

The best thing next in the morning next to a sunrise and a hot mug of coffee are these fluffy egg breakfast muffins. Whether you’re on a low carb or high protein diet, or you need a quick breakfast to go, Breakfast Muffins are a delicious and healthy meal and allows for endless combination s to customize these gems. You can use your favorite egg substitutes as well and if you have leftover steak, sausage or bacon- throw them in for some culinary delights. My basic recipes uses ham and cheese, but check out how to ROCK OUT this recipe to create several variations that satisfies your vegan, gluten-free, or high protein taste buds.   • 6 English Muffins (Keto and Gluten Free diets use preferred alternatives)

  • 8 large eggs

  • 6 tsp butter

  • 2 cups shredded cheddar cheese

  • 2 cups shredded hash brown potatoes (Keto diets can use other vegetable alternatives)

  • 1/4 cup diced yellow onion

  • 1/2 cup chopped ham or breakfast sausage


Muffin pan with 6 large cups, cooking spray, cooking spoon, teaspoon, large measuring cup, whisk, mixing bowl, silicone gloves.

Before you handle any food, wash your hands thoroughly with soap and water. Clean your kitchen work area and pull back your hair or wear a cap. You want to avoid contaminating your meal with harmful bacteria that could cause food illness.



To make Breakfast Egg Muffins:

1. Preheat oven to 350 degrees F.

2. Spray the muffin pan cups with cooking spray.

3. Halve the English muffins and place at bottom of the muffin cups. You may need to trim the circles slightly smaller so they fit easily at the bottom of the muffin pan.

4. Add a teaspoon of butter on top of each English Muffin.

5. In a bowl, add eggs and wisk to mix well.

Add hash browns, onion, one cup of cheese and stir to mix.

TIP: For lighter eggs, add 1/2 cup of sour cream to the eggs and wisk together thoroughly.

6. Spoon mixture into each muffin cup. Top each cup with ham or sausage and sprinkle remaining cup of shredded cheese.

7. Bake at 350 degrees F for 30-35 minutes.

8. Remove pan wearing silicone gloves and cool for 5 minutes. When muffins are done, they will be firm and fluffy.

9. Using a spoon, remove muffins from pan and serve. Season to taste.



1 serving: 110 calories, 6 g fat (2 g saturated fat), 200 mg cholesterol, 190 mg sodium, 1 g carbohydrate (0 sugars, 0 fiber), 11 g protein.


Eggs are a great inexpensive source of high quality protein. More than half the protein of an egg is found in the egg white along with vitamin B2 and lower amounts of fat and cholesterol than the yolk. The white part is also rich in selenium, vitamin D, B6, B12 and minerals such as zinc, iron and copper.


A Sparkling wine. Champagne and eggs are a classic pairing, such as a crisp unoaked Sauvignon Blanc. Zingy whites work well with eggs, and Sauvignon Blanc in particular is terrific with baked eggs that are made with herbs.


Beverage pairing: Since it’s intended for breakfast, why not enjoy with a hot cup of coffee or your favorite juice.

Side Dish pairing: Italian Herb Bread toasted with butter or olive oil. Sliced oranges, strawberries, or bananas.

Vegan and vegetarian muffins- Replace eggs with preferred egg substitute and nondairy cheddar cheese. Instead of ham or sausage, add your favorite vegges, like peppers, mushrooms, onions, broccoli.

Kick the GLUTS as eggs are gluten-free, and use gluten-free English muffins. You can also leave out the English Muffins and simply add more of the egg mixture.

Bacon Cheddar Muffin. Replace ham/sausage with crumbled bacon.

Meat Lovers Muffin. Leave out the hash browns and add crumbled bacon, ham, and sausage to egg mixture. Increases protein and lowers carbs.

Ballpark Muffin. Replace ham with crumbled Italian sausage, green and red peppers, and chopped onion.

Country Muffin. Replace ham/sausage with green/red peppers, onion. Top with sour cream.

Southwestern Muffin. Replace ham with crumbled bacon, peppers. onion and top with medium salsa.

Steakhouse Muffin. Replace ham with chopped steak or ground beef. Top with Cheddar or crumbled Bleu cheese.

Breakfast Muffin Mash. Place muffin inside favorite sandwich bread and mash it down for a delicious breakfast sandwich to go.
