Butterscotch Blondie Brownies


Blondies are a great and easy bar cookie dessert that is a nice twist on classic brownies. Butterscotch is a flavor made from melted butter and brown sugar.  Those are the two primary ingredients in these blondies.  No white sugar is used, giving these bars a great rich flavor.  Toss a handful of butterscotch chips into the batter, just for good measure.

  • 1 cup unsalted butter, melted

  • 1 3/4 cup light brown sugar, tightly packed

  • 2 eggs and 1 extra egg yolk, room temperature

  • 2 teaspoon vanilla extract

  • 2 1/2 cups all purpose flour

  • 2 teaspoons cornstarch

  • 1 teaspoon baking powder

  • 1 teaspoon salt

  • 1 1/2 cups butterscotch chips

Large mixing bowl, 9 x 9 baking pan, medium mixing bowl, sharp knife, mixing spoons, measuring spoons, measuring cups, parchment paper

Prep: 20 min

Cook: 40 min. Ready: 60 min Serves: 16 brownies

  1. Preheat oven to 350 F prepare a 9x9 pan by lining with parchment paper.

  2. Combine melted butter, vanilla extract, and sugar in a large bowl, stir well.

  3. Add eggs, and an egg yolk, one at a time, stirring well after each addition.

  4. In a separate, medium-sized bowl, whisk together flour, cornstarch, baking powder, and salt.

  5. Gradually stir dry ingredients into wet until completely combined. Stir in butterscotch chips.

  6. Spread batter evenly into prepared pan.

  7. Bake until edges just begin to turn golden brown about 35-40 minutes.

  8. Allow to cool before cutting and serving
