These stuffed mushrooms are very easy to prepare ahead of time, just do everything except baking them in the morning, cover and refrigerate until ready to cook them right before the party. When ready to make, just place stuffed mushrooms onto the baking dish and pop them in the oven.
Whether it’s for 2 or 20, this stuffed mushrooms recipe will be a hit of the party. You can use either small baby bella mushrooms, medium ones, or large ones, depending if you’re making them for a big party or a private family evening.
12-15 medium sized mushrooms of your choice, stems removed and set aside
8 oz cream cheese
1 TBSN olive oil to saute
1 small shallot
3 TBSN garlic, minced
5-7 cilantro leaves
1 egg
1/4 cup breadcrumbs
1 TBSN onion powder
1/4 cup Parmesan cheese, grated
1 TBSN grated Parmesan cheese, for topping

1. Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray.
2. Wash your mushrooms and carefully take off the stems. Chop stems extremely fine, discarding tough end of stems, set aside.
3. Toss the mushroom caps lightly in olive oil and set aside.
4. Preheat a small cooking pan and 1 tbs of olive oil.
5. Chop the shallot and mushrooms stems into small pieces. Saute the chopped mushrooms and onion until tender.
6. Add minced garlic to the pan. Saute until fragrant and move the veggies to the small bowl to cool.
7. When garlic and mushroom mixture is no longer hot, stir in cream cheese, Parmesan cheese, bread crumbs, cilantro, onion powder and egg. Mixture should be very thick. Using a little spoon, fill each mushroom cap with a generous amount of stuffing. Arrange the mushroom caps on prepared baking sheet.
8. Bake the stuffed mushrooms for 20 minutes making sure that the mushrooms are completely cooked and hot throughout.
9. Sprinkle the stuffed mushrooms with some more fresh grated Parmesan cheese and serve.
